Description

The Sabre is a fine fish to delicious flesh. It is eaten both raw and cooked. Cooked breaded, floured, poached, cooked in court bouillon or the strong, it's always a treat. This roll is that it is most appreciated. Here is the recipe for pesto rolled saber!

Preparation

Spread nets saber.

Spread each fillet with a tablespoon of pesto.

Roll the fillets on themselves, and stitch to keep the wraps.

In a pan heat a little olive oil with a tablespoon of pesto.

Cook for 5 minutes, pepper (add salt if necessary) and sprinkle with lemon juice.

Serve immediately!
